2 Ingredient Banana Ice Cream
So what the Summer has ended? For ice cream lovers like me, any time is good to have an ice-cream. Especially if I can prepare it at home from only 2 ingredients. When I first saw this Banana Ice Cream recipe on Two Peas and Their Pod I didn’t believe that 2 ingredients can create smooth and creamy frozen dessert, but bananas again has surprised me as an excellent replacement for milk, eggs and cream, which are usually used to make an ice cream. Also, there is no need to add extra sugar, so they are both healthy and guilt-free. Just use ripe bananas – the riper the bananas, the sweeter an ice cream will be.

- 4 ripe Bananas
– 1 Tbsp Peanut Butter
- Prepare 4 ripe bananas and the peanut butter.
- Peel bananas and cut them into small discs, then place in one layer on a big plate or baking sheet and freeze for about 2 hours.
- Place frozen banana pieces in a powerful blender or food processor and blend, until the mixture become smooth and creamy, scrape down the bowl if it sticks (If you have problems with creating creamy consistency add 1-2 Tbsp of milk, that should help).
- Add 1 Tbsp of peanut butter and blend again to combine the ingredients.
Serve immediately if you like soft consistency ice cream or place the mixture in a deep container and freeze for another few hours.
