Ham and Egg Breakfast Cups


These days none of us has enough time to celebrate dining with family properly, but Sunday is always special for us. I really appreciate these lazy mornings in the kitchen, cooking with no rush, still in my pyjamas and with a cup of favourite coffee in my hands. For such perfect moments, there is always a perfect recipe. And here is one of them. Delicious ham and egg  breakfast cups – easy, creative and impressive to serve. When I first made them, my fiance said he could eat like this every day, and I totally agree with him.

Frankly speaking, I’m pretty sure once you try this recipe you will feel the same way.

Curious how I made them?


What will we need:

- 4 pieces of good quality ham
– 2 eggs
– large piece od red pepper
– 100 g cheese, shredded

– chive
– salt and black pepper to taste


  • Prepare all the ingredients ham, eggs, chive, cheese, red pepper, wash them properly (don’t forget to wah the eggs too!) and preheat the oven to 200°C.

  • Chop some chive and cut large piece of red pepper in squares, put in a bowl, add shredded cheese and 2 eggs, mix all the ingredients together. Add some salt and pepper to taste.


  • Wrap each piece of ham inside of each muffin cup (I don’t mind if egg mixture come outside a little bit, but if you want the mixture to stay in the place you should line each muffin cup with a piece of ham with no holes, so the ham will make a cup itself)


  • Using a spoon fill each cup 2/3 of the way with egg mixture.


  • Bake in 200°C for about 10-12 minutes, until the eggs are set and golden brown.
